mediterranean breakfast casserole

Today I’m excited to share with you my Mediterranean Breakfast Casserole, vegetarian and high in protein! This vegetarian casserole is an ideal breakfast for all the family, and a perfect way to trick your picky eater child into eating more veggies! Plus, the addition of the feta cheese is a special touch that will make this dish even tastier and richer in flavors.

Low in calories and high in fiber, due to the presence of different types of vegetables, this vegetarian casserole will also help you maintain a healthy diet and start your day in the best way possible. And it is gluten-free too

Last but not least, it is also super easy and quick to make, and a meal-prep-friendly breakfast too: you can make it ahead in less than forty-five minutes and enjoy it all week on the go!
